These rice balls do not need a complicated presentation. Warm rice, egg, spinach, and a little sesame come together in a shape you can pick up and take along. If you have leftover rice from the night before, or want a simple lunch to prepare in the morning, they make the question of what to eat a little more concrete.

Triangular rice balls with egg, spinach, and sesame on a dark board while a hand wraps one with nori

Make 6 small rice balls

  • 2 cups warm cooked rice
  • 2 eggs, scrambled and cooled
  • 1 cup finely chopped spinach, quickly cooked until soft and cooled
  • 1 teaspoon toasted sesame, a pinch of salt, and 2 nori sheets cut into strips

Mix, then shape

  1. Gently combine the rice, egg, spinach, sesame, and salt.
  2. Wet your hands lightly, divide the mixture into 6 portions, and gently shape each into a triangle or round ball.
  3. Wrap each one with a strip of nori just before eating. Add soy sauce or chili sauce on the side if that suits your taste.

Keep prep within reach

You do not need to prepare a whole week at once. Making one familiar food easy to pick up and eat is already a form of planning. NIDDK includes small, practical plans among approaches to changing habits; this recipe is simply a starting point you can adapt to the ingredients at home.
