Want something warm on a busy evening without a pile of pans? Tomatoes, white beans, and eggs can share one baking dish for an ordinary dinner with a bright color and a short path from fridge to table.

Tomato and white bean baked eggs

Ingredients for two

  • About one cup of tomato sauce or chopped tomatoes;
  • About one cup of drained, rinsed white beans;
  • Two eggs and a small handful of spinach;
  • Garlic, black pepper, parsley, and a little olive oil, to taste.

Method

  1. Heat the oven to 190°C. Mix tomatoes, beans, spinach, and seasonings in a shallow baking dish.
  2. Make two small wells with a spoon and crack in the eggs.
  3. Bake for about 10–14 minutes, until whites and yolks are firm. If you use a food thermometer, 71°C at the center of an egg dish is the safer target.
  4. Finish with parsley and enjoy with bread or in your own usual way.

Rinsing canned white beans can make the dish feel fresher, and any leafy green you have can stand in for spinach. Both the dish and its handles will be hot, so let it rest briefly before serving.
