When you want a warm meal but do not want dinner to become many separate steps, let one skillet do most of the work: brown the tofu at the edges, bring in mushrooms and greens, then let a light miso sauce coat everything. The rice can be freshly cooked or already waiting from yesterday.

A two-serving counter list
- 2 bowls of cooked rice, 1 block firm tofu, a handful of mushrooms, and 2 handfuls of greens;
- 1 to 2 spoonfuls miso, 3 spoonfuls warm water, and a small amount of cooking oil;
- Optional: rice vinegar, scallions, or sesame seeds for the acidity or aroma you enjoy.
The one-pan order
- Pat the tofu dry, cut it into cubes, and brown the edges in a little oil; set it aside;
- Use the same pan for mushrooms until fragrant, then add the greens;
- Stir the miso with warm water, pour it into the pan, toss gently, and bring back the tofu and rice to warm through.
This bowl is not a nutrition prescription and does not need exact measuring. Its value is a sequence you can reuse: a starch, ingredients warmed in one pan, and a simple seasoning. NIDDK recommends placing small, feasible steps into a plan; a recipe you are willing to make again can be a very practical backup option.
If you are sensitive to soy or gluten, choose substitutes by checking the ingredient lists on your miso and seasonings. Which green would you add to your version?
